A Madeira Island drink. Poncha is of Agurdente
--made from sugar cane-- with lemon and honey.
You'll find that
some people will choose to make Poncha with
other types of liquor. You may choose to
use Whiskey, Scotch or Rum. I use Whiskey.

Poncha Ingredients (Note: There's a few variety recipes of Poncha)
add some lemon rinds (from 2 lemons) to a pitcher using a knife or cheese grate
cut lemons in half, and squeze to extract lemon juice from the 2 lemons
add slightly over 1/2 cup of sugar (or add just a little more honey if you don't want sugar)
add 12 ounces of
whiskey, or rum ... for this recipe I prefer whiskey, as shown in photo)
add ~ 6-8
ounces of water (adjust to your liking)
1-2 ounces of
honey... if you're using sugar, as mentioned prior (adjust
to your taste)
Stir /mix
vigorously with the Portuguese poncha stick, as shown in the photo or
you can place into a jar with a cap to shake it well, a mixer works as
well. Enjoy with or without ice cubes in a glass.
Equates
to 24 ounces , serving up to four people

enjoyed Poncha. Below is his recipe for Poncha.
On our travels to Madeira island in 2016... we frequently
visited a local restaurant
in Santa Cruz and had their Poncha.
Freshly
squeezed lemons (2) to extract juices (~ 35% content)
Freshly squeezed orange, to extract juices (~ 15% content)
Some strain the juices... I enjoy keeping ONLY the lemon pulp
Add ~1 1/2 oz or so of honey... you can adjust to your liking
Mix the contents above, stirring it well. I use a Poncha stick.. you can use a blender
Only after mixing the contents above well, add Aguardente De
Cana (made from Madeira's sugar cane) or use Rum (~ 50%).
Mix very well one last time. You may wish to add a few ice cubes to your drink...

Drink Ingredients
Any brand of
Vodka will do
4 - 5 medium size
limes (slice
them, place into pitcher, &
pound to extract juice / pulp)
12 ounces of vodka
~ 8 ounces of water
slighlty over 1/2
cup of
sugar
~ 8 - 12 ice cubes or go
crushed ice
stir well
and enjoy! (the more chill, the better)
Equates
to ~ 24 ounces, serving
up to four people
